A 20-minute conversation the night before that saves three hours of culling.

Color and exposure baseline
Share your import preset. Have them dial WB and exposure on your test frame. When you both come home, the cull is one batch, not two arguments.
Roles by section
Getting ready, you take the bride, they take the groom. Ceremony, you front, they behind. Reception, you on the dance floor, they on the candids tables. Tell them this on paper. The wedding day is too loud to brief by voice.
Pay them well, name them publicly
Pay above the local rate. Tag them on the gallery and in blog credits. Good seconds are rarer than good photographers, and they remember.
